If you’re not from Arizona (or southern California, for that matter), then you probably haven’t been to a lovely little restaurant called Pita Jungle. For the uninitiated, Pita Jungle serves all manner of Mediterranean-inspired dishes from cilantro-jalapeno hummus to chicken shawarma sandwiches wrapped in lavosh bread. It’s a veggie-heavy menu, and they also have a lot of items that can be modified to vegan, which is great for people like my vegan sister. My favorite item on the menu happens to be vegan as well, even if I’m not. (Hell, I had a double-double from In N Out for dinner last night.) It’s hard to believe that one week ago, I was getting on a plane to San Diego.
Any time I’ve ever been to SD, it’s so hard to leave. I always end up going in the summertime, which of course makes it that much more difficult to leave the cool sea breezes in exchange for the never-ending drudgery of 100+ degree temps back in Phoenix.
While the weather was a nice bonus, the main goal of my trip was to visit with my dad. It had been over 2 years since I’d seen him last, and it was so great to catch up. He’s halfway through his chemo treatments and doing relatively well, all things considered! He’s had a few minor setbacks but so far it hasn’t been anything he can’t handle.
This is probably the most health-conscious recipe I’ve ever posted. It may be the most health-conscious recipe I’ve ever made. No butter? No added sugar? No white flour, chocolate, bacon, or glazed donuts? I know, I know. It shocked me, too.
I’ll allow a super healthy recipe on occasion though, especially cause these were a birthday gift for my dad. Today’s his big 5-8! Since his diagnosis, he’s basically gone vegan and gluten free, so I wasn’t about to make him a pile of caramel turtle brownies (mmm, those do sound good though…) and totally wreck his healthy diet! What kind of a daughter would I be?
I’m so lucky this week to be taking some time off work, and I’m doubly lucky that my awesome sister Lindsey is visiting me all week long!

Linds happens to be vegan, which makes it quite difficult for her to find baked goods that she can eat without getting sick from any sneaky dairy ingredients. While she was visiting, I figured we’d make a tart that’s vegan!
Recently I’ve begun a healthier eating plan and started a workout routine in an attempt to lose about 30 pounds before my 30th birthday, which is coming up in 6 months. I’ve had this recipe in my head for a while now, several years, in fact. I first had a Vietnamese-style summer roll at Pei Wei of all places, and I know that it’s not the most authentic of restaurants to experience a Vietnamese dish for the first time, but they had the basic elements down. I made a version of these at home about 7 years ago, but I have to say, these came out much more successfully!
For a few years now, I’ve been a big fan of the blog Smitten Kitchen. Deb’s photos and food are absolutely stunning, and her posts are really engaging. What’s not to love?
